Kids Breakfast Muffins

Baking is a therapeutic, creative and fun way to pass an afternoon at home with the children. The following muffin recipe is proof that you don’t need to pack your baking with sugar and chocolate in order to make a tasty treat!

These yummy sugar-free brekkie muffins are both healthy and delicious, and are the perfect go-to breakfast or snack for the little ones to munch on throughout the day when feeling peckish. We recommend whipping up a big batch, popping them in the freezer and defrosting when needed.

Best of all, the ingredients are super simple and are more than likely already in your cupboard and fridge. Recruit the kids to help out when mixing all the ingredients together in a bowl with this easy 3 step method.

  • 2 apples (grated,peeled)
  • 150 g butter
  • 2 bananas (medium ripe)
  • 1 1/2 cups wholemeal self-raising flour
  • 2 eggs
  • 2 tsp baking powder

  1. Preheat the oven to 180°C (160°C fan-forced). Line a muffin tray with paper cases.
  2. Put apple and butter in a saucepan and cook for 5 minutes until soft, then peel and mash bananas with the back of a fork (the riper they are, the better for natural sweetness).
  3. Mix all ingredients together in a bowl. Spoon the mixture into the paper cases and bake for 20 minutes. Allow to cool before serving.
